Cassava Patties Recipe

Ingredients : Makes 12

450 g

250 ml

125 g

2-3 drops

Grated fresh cassava

Water

Sugar

Green food coloring (optional)

Grated coconut

Method :
  • Mix the cassava, water and sugar in a bowl.

  • Pour into a blender and blend until mixture is smooth. Stir in food coloring if desired.

  • Pour the mixture into small molds or muffin pans and place in a steamer above a saucepan of boiling water.

  • Cover with a tight fitting lid and steam over medium heat for about 45 minutes, or until firm, making sure water does not touch the patties.

  • Set aside to cool, then remove from molds. Roll in grated coconut before serving.
