Soak mushrooms in hot water for 40
minutes. Squeeze out liquid, remove stems, and chop the tops very
finely. Place mushrooms and green onions (scallions) and pork in a bowl.
Add Nuoc Cham (fish sauce), eggs, salt and
pepper to taste and combine thoroughly.
Grease a loaf pan, add meat mixture,
patting down firmly. Cover with foil, sealing well.
In a larger roasting pan, pour hot water
to half way up the loaf pan and place in moderately hot oven 400oF/200oC
for about 60 minutes or until done. Test with knife or skewer which
should come out cleanly from the center.
Allow the loaf to cool a little, run knife
around the pan sides then unmold.
Slice and garnish with coriander
(cilantro) leaves.
