Tangy Barbecued Pork Skewers Recipe

Ingredients : Serves 8-10

Marinade :

3 tablespoons

Bamboo skewers

Pork shoulder

Tomato or banana ketchup

 

 

Lime juice

Garlic, chopped

Dark brown sugar or palm sugar

Vinegar

Soy sauce

Clear soft drink such as 7-up or Sprite

Method :
  • Soak the bamboo skewers in water for 30 minutes then set aside.

  • To prepare the Marinade, combine lime juice, garlic, sugar, vinegar, soy sauce and soft drink in a bowl and set aside.

  • Cut the pork into bite-sized pieces. Marinate pork in mixture for 8 hours or overnight in the refrigerator.

  • Drain the meat and reserve Marinade. Thread 4-5 pieces of meat onto each skewer.

  • Heat griller and grill pork over medium-low heat, for about 3-5 minutes on each side or until lightly browned.

  • Meanwhile, place the Marinade in a wok and bring to the boil. Simmer for 3-5 minutes.

  • Remove from heat and blend in tomato or banana ketchup, stirring until smooth.

  • Brush both sides of the skewered pork with the reserved Marinade.

  • Continue grilling until pork is completely cooked and browned on both sides.

  • If desired, reheat the Marinade and serve as a dip.
