Cold Dish Steam Chicken Recipe

This cold dish steam chicken would make an ideal starter or part of a buffet meal.

Ingredients : Serves 6 - 8

2 kg

3 slices

2 sprigs

 

Sauce

1 teaspoon

2 tablespoons

1 teaspoon

1 clove

1 slice

1/2 tablespoon

Chicken

Ginger root

Spring onions (scallions)

 

 

Salt

Soy sauce

Sugar

Garlic, crushed

Ginger root, peeled

Spring onion (scallion)

Sesame oil

Method :
  • Clean the chicken. Place it in a large pot.

  • Add the ginger root and onions. Cover the pot with a tight fitting lid (preferable pressure cooker).

  • Bring it to boil. Simmer for 5 minutes, then turn off the heat and let the chicken cook gently in hot water for 3 - 4 hours.

  • Do not lift the lid while awaiting the water to cool.

  • To serve, remove the chicken and drain.

  • Chop into 20 - 24 pieces and place on the serving platter.

  • Finely chop the garlic, ginger root and onion.

  • Mix with salt, sugar, soy sauce, sesame oil and a little chicken stock. Either pour the mixture all over the chicken or use as a dipping sauce.
