Clean the chicken and cut in half, then
cut each half into 4 pieces.
Place in a bowl and marinate with green
onion, ginger, star anise, soy sauce, wine, egg white and cornstarch for
1/2 hour.
Heat oil in frying pan and drop in chicken
to deep fry for 3 minutes. Take out, heat oil again until very hot, then
fry once more about 1 minute until brown.
Remove chicken and drain off oil from
frying pan.
Place on plate and splash sesame oil over
the chicken.
