Fried Herbs Chicken Recipe

Ingredients : Serves 4

Chicken thighs or wings

Salt

Ground black pepper

Five spice powder

Oil for deep frying (add extra if required)

Nuoc cham sauce

Lime juice

Red chopped chili, for garnishing

 

Method :
  • Place the chicken pieces in a medium pan, cover with cold water and bring to boil.

  • Skim any scum from the surface.

  • Add salt, pepper and five spice powder.

  • Simmer for 15 minutes until chicken is tender.

  • Drain the chicken and pat it dry with paper towels.

  • Heat the oil in a deep pan. Add the chicken pieces about 3 or 4 at a time. Fry until golden and very crisp. Drain on paper towels.

  • Place the chicken on a serving plate

  • Sprinkle over nuoc cham sauce, lime juice and chili.
