Grilled Chicken with Lemon Grass Recipe

(Ga Xao Lan)

Large boneless, skinless chicken breasts

Lemon grass stalks, very finely chopped

Garlic, finely chopped

Palm or golden granulated sugar

Light soy sauce

Vietnamese fish sauce

Lemon, juiced

Groundnut oil

Method :
  • Butterfly the chicken breasts. Sit each one horizontally, so that is still joined in one side then open it out.

  • Cover it with cling film and bash it flat with a meat mallet or a rolling pin.

  • Combine the lemon grass, garlic, sugar, soy and fish sauces, lemon juice and groundnut oil in a bow.

  • Mix thoroughly, then coat the chicken.

  • Cover and leave to marinate for at least 1 hour.

  • Place the chicken breasts on a grill rack and cook under a preheated grill for about 3 minutes on each side, or until cooked through.

  • Slice and serve.
