Grilled Lime Chicken Recipe

Boneless, skinless chicken breast, cut into 1 inch cubes

Clear honey

Vietnamese fish sauce

Spring onions, chopped

Garlic, chopped

Kaffir lime leaves, shredded

Vegetable oil, for brushing

Salt

Pepper

Mint leaves, for garnishing

Method :
  • Mix the chicken in a bowl with the honey, fish sauce, salt and pepper. Leave to stand.

  • In a small food processor, mix the spring onions, garlic and lime leaves, adding a little water if necessary. Make sure the lime paste is completely smooth, then add to the chicken.

  • Stir well then cover and marinade for 2 hours.

  • Cover a grill rack with foil, add the chicken pieces and brush with oil. Place under a preheated grill and cook, turning form time to time, for about 15 minutes, or until the chicken is cooked through.

  • Keep brushing with the oil and any remaining marinade.

  • Garnish the chicken with mint leaves.

  • Serve with rice, lime wedges and nuoc cham dipping sauce.
