Boneless, skinless chicken breast, cut into 1 inch cubes
Vietnamese fish sauce
Spring onions, chopped
Kaffir lime leaves, shredded
Vegetable oil, for brushing
Mint leaves, for garnishing
Mix the chicken in a bowl with the honey,
fish sauce, salt and pepper. Leave to stand.
In a small food processor, mix the spring
onions, garlic and lime leaves, adding a little water if necessary. Make
sure the lime paste is completely smooth, then add to the chicken.
Stir well then cover and marinade for 2
Cover a grill rack with foil, add the
chicken pieces and brush with oil. Place under a preheated grill and
cook, turning form time to time, for about 15 minutes, or until the
chicken is cooked through.
Keep brushing with the oil and any
Garnish the chicken with mint leaves.
