Sautéed Chicken with Lemon Grass and Chili Recipe

(Ga Xao Sa Ot)

Ingredients : Serves 4


2 stalks

5 cloves

500 g

1/2 teaspoon

1/4 teaspoon

1 teaspoon

1 teaspoon

1 teaspoon

2 tablespoons

Red chili, seeded

Lemon grass, bulbous portions only, thinly sliced

Garlic, peeled and chopped

Chicken pieces


Ground white pepper


Annatto seed oil

Chicken seasoning powder

Cooking oil

Method :
  • Pound or blend (process) chilies, lemon grass and garlic together until fine.

  • Marinate chicken with one-third of pounded mixture, salt, pepper, sugar, annatto seed oil and chicken seasoning powder for 30 minutes.

  • Heat oil in a wok and stir fry remaining pounded mixture until fragrant and golden brown.

  • Add chicken and stir fry for 10 minutes until chicken is cooked.

  • Stir in 125 ml water and simmer for a further 10 minutes until chicken is tender.

  • Serve with steamed rice
