Smoked Chicken Recipe

Young chicken

Brown peppercorn

Salt

Green onion

Ginger

Star anise

Cinnamon stick

Soy sauce

Sugar

Flour

Black tea leaves

Sesame oil or chicken grease

Method :
  • Clean and wipe the chicken, rub with fried brown peppercorn and salt which have been fried over low heat in dry frying pan about 1 minute. Soak about 5 hours.

  • Boil 8 cups water in a large pot. Add green onion, ginger, star anise, cinnamon, and soy sauce, cook for 10 minutes. Add the chicken and continue to cook 10 more minute over lot heat. Turn over once. Remove and let cool.

  • Place the sugar, flour and tea leaves in heavy iron pan. Add a rack over this and place the chicken on its side on the rack. Cover, smoke for about 8 minutes over low heat. Turn the chicken and smoke for 5 minutes more, until chicken turns brown.

  • Remove the chicken from pan and brush with sesame oil or chicken grease. After cool, cut in 1 inch wide and 2 inches long pieces, lay on plate in a chicken shape.
