Spicy Chicken Skewers Recipe

Marinade

Boneless chicken fillets

 

 

Green onions (scallions) chopped

Lemon grass, peeled and finely sliced

Sugar

Small red chili pepper, seeded and crushed

Nuoc cham sauce

Soy sauce

Peanut oil

Coconut milk

Five spice powder

Method :
  • Soak about 25 bamboo skewers overnight in boiling water for at least 45 minutes so they will not burn when cooking. Combine marinade ingredients.

  • Cut chicken into thin strips and add to marinade, ensuring each strip is covered. Cover and refrigerate several hours to overnight.

  • Drain and reserve marinade for another use or discard. Thread chicken strips on to skewers. Barbecue or broil about 3 minutes until brown.

  • Serve as part of a main course or appetizers with nuoc cham sauce or peanut sauce.
