Steamed Chicken with Shiitake Mushrooms Recipe

Ingredients : Serves 4

Shiitake mushroom (soaked if dried)

Boneless, skinless, chicken breast, cut into small thin strips

Fresh root ginger, finely chopped

Spring onions, diagonally sliced

Pepper

Vietnamese fish sauce

Garlic, finely chopped

Sesame oil

Salt

Coriander (cilantro) leaves, for garnishing

Method :
  • Cut the mushrooms into thin strips and put them into a heatproof bowl with the chicken,

  • Add all the remaining ingredients and mix thoroughly.

  • Cover the bowl with foil and place it in a steamer over boiling water. Steam for 40 minutes, making sure to top up the water in the steamer now and again.

  • Serve on a warmed platter.

  • Garnish with the coriander leaves.
