Steamed Chicken with Green Onion Recipe

Ingredients : Serves 4

Marinade

Chicken

 

 

Green onions

Ginger

Salt

Wine

 

Green onion, shredded

Young ginger, shredded

Oil

Method :
  • Crush green onion and ginger with blade of knife, put in bowl with wine and salt. Mix well.

  • Clean and rub the chicken with #1 ingredients (outside and inside). Soak for 1/2 hour but not over    2 hours.

  • Place the bowl of chicken and marinate in boiling steamer to steam over high heat for 10 to 15 minutes.

  • Turn off heat and remove the chicken after 15 minutes. Cut the chicken into 1 inch wide, 2 inches long pieces, lay on platter in the chicken shape.

  • Sprinkle the shredded green onion and ginger on top.

  • Heat oil in frying pan. With a large cooking spoon, scoop up all the heated oil and splash over chicken dish.

  • Drain the oil back into pan and reheat. Repeat process a second time but do not drain from dish.

  • Serve hot.
