Shrimp Fried Rice Recipe

Shrimps, peeled

Spring onion, chopped

Button mushrooms

Courgette, thinly sliced

Carrot, thinly sliced

French beans, cut into 2.5cm lengths

Rice wine or dry sherry

Light soya sauce

Freshly ground black pepper

Salt

Plain boiled rice

Spring onions, neatly chopped into rounds to garnish

Method :
  • Heat 8ml oil in a wok and stir fry the shrimps for 1 minute. Remove and set aside.

  • Add the remaining oil and stir in the spring onion.

  • Add the mushrooms and the other vegetables and stir fry for 2 minutes over a high heat.

  • Put the shrimps back into the wok with the vegetables and add the rest of the ingredients except the rice, continuing all the while to stir.

  • Add the rice and stir fry until the rice has changed color.

  • Place in a large serving bowl and garnish with the chopped spring onions.
