Chicken, Mango and Walnut Salad Recipe

Smoked chicken breast fillets

Celery

Mignonette lettuce, torn

Large firm mangoes

Walnut halves

Spring onions (scallions), thinly sliced

Mayonnaise

Lime juice

Dijon mustard

Olive oil

Method :
  • Cut the chicken into bite-sized pieces and diagonally slice the celery.

  • Arrange the lettuce on serving plates and top with the chicken and celery.

  • Slice the mangoes into bite-sized pieces, then add to the plates with the walnuts and half the spring onion.

  • Mix together the mayonnaise, lime juice, mustard and oil and drizzle over the salad.

  • Serve sprinkled with the extra spring onion.
