Crisp Carrot and Diakon Pickles Recipe

(Goi Dua Chuot)

Ingredients : Serves 6

175 g

 

Dressing

185 g

1 teaspoon

250 ml

Small carrot, peeled and cut into matchsticks

to yield 1 cup

Diakon raddish, cut into matchsticks to yield 1 cup

 

 

Caster sugar

Salt

Rice vinegar

Method :
  • Make the dressing by combining all the ingredients in a bowl and mixing until the sugar is dissolved.

  • Combine the vegetables in a bowl.

  • Add the dressing and toss to mix well.

  • Allow to marinate for at least 30 minutes, tossing once or twice.

  • Drain the pickles and transfer to a serving bowl.

  • Serve with a fish, meat or poultry dish and steamed rice.
