Pickled Carrot Strips Recipe

(Goi Ca Rot)

Large carrots, peeled and cut into long strips with a mandoline or vegetable peeler

White rice vinegar

Cold water

Golden caster sugar

Salt

Spring onion, shredded

Chopped mixed herbs, such as coriander, basil and mint leaves

Method :
  • Combine the carrots, vinegar, water and sugar in a large bowl with a pinch of salt.

  • Cover and refrigerate for 2 -3 hours, stirring occasionally.

  • Remove the carrots from the bowl with a slotted spoon and transfer to a serving bowl.

  • Add the spring onion and herbs.

  • Mix well and serve immediately.
