Brown Stock Recipe

Ingredients : Makes about 2.8 liters



1 cloves

3.4 liters

Onion, cut into quarters

Celery sticks, chopped



Unpeeled root ginger

Cold water

Method :
  • Place all the ingredients in a large pot with a well-fitting lid and bring to the boil.

  • Adjust the heat to maintain a faint simmer (It is important to make sure that the stock is not boiled a boiling result in a cloudy broth.

  • Simmer for 4-5 hours, stirring occasionally.

  • Leave to cool, then strain.

  • Use as required.
