Satay Sauce Recipe

Ingredients : Serves 4-6

Peanut oil

Red Asian shallots, finely chopped

Garlic, crushed

Finely chopped fresh ginger

Bird's eye chilies, seeded and finely chopped

Crunchy peanut butter

Coconut milk

Soy sauce

Grated palm sugar or soft brown sugar

Fish sauce

Kaffir lime leaf

Lime juice

Method :
  • Heat the oil in a saucepan over medium heat.

  • Add the shallots, garlic, ginger and chili.

  • Stir constantly with a wooden spoon for 5 minutes, or until the shallots are golden. Reduce the heat to low and add the remaining sauce ingredients.

  • Simmer for 10-15 minutes, or until thickened.

  • Remove from the heat and keep warm. Discard the lime leaf.

  • Serve with satay chicken or barbecue chicken.
