Hanoi-Style Fried Fish Recipe

Boneless fish fillets

Turmeric, grated

Shrimp paste

Soy bean oil

Peanut oil

Fresh dill, chopped

Green onions (scallions), chopped

Ginger, grated

Nuoc cham sauce

Sugar

Peanuts, crushed

Salt

Pepper

Lettuce

Mint leaves

Cooked rice

Method :
  • Prepare dipping sauce by mixing shrimp paste, a little extra oil, nuoc cham sauce and sugar. Boil and add more sugar, if desired.

  • Season fish with salt and pepper. Cut into 1 in pieces.

  • In a heavy-based pan, heat oil.

  • Add fish, turmeric and ginger. Turn gently and just before fish is done, add green onions (scallions), dill and peanuts.

  • Arrange lettuce and mint leaves on a bed of rice and serve with fish.

  • Serve with dipping sauce.
