Hot and Spicy Stir Fry Shrimp Recipe

Ingredients : Serves 4

Medium raw shrimps

Snake beans

Oil

Onion, medium size, very finely sliced

Garlic, finely chopped

Lemon grass (white part only), very finely sliced

Red chilies, seeded and very finely sliced

Sugar

Nuoc cham sauce

Rice vinegar

Chopped garlic chives, for garnishing

Method :
  • Peel and devein the shrimps. Top and tail the beans and cut them into 2 cm pieces.

  • Heat the oil in a large heavy-based wok. Add the onion, garlic, lemon grass and chili. Stir-fry over moderately high heat for 4 minutes, or until the onion is soft and golden.

  • Add the beans to the wok and stir-fry for 2 to 3 minutes or until they become bright green.

  • Add the shrimps and sugar. Toss gently for 2 minutes.

  • Add the nuoc cham sauce and vinegar, toss well. Sprinkle with the garlic chives.

  • Serve immediately on the serving plate.
