Seafood Omelet Recipe

(Trung Chien Voi Cua)

Ingredients : Serves 3 - 4

Spring onions (scallions), chopped

Nuoc cham sauce

Fresh red chili, sliced (optional)

Crab meat, fresh or frozen

Black pepper

Salt

Eggs

Oil (for frying)

Method :
  • Beat eggs lightly. Season with salt and pepper.

  • Pick over crab meat and discard any bits of bony tissue.

  • Heat 1 tablespoon oil in a frying pan and sauté the spring onions (scallions) and chili for 1 minute.

  • Add crab meat and fry for another 1 to 2 minutes. Sprinkle nuoc cham sauce over.

  • Remove mixture to a small place and allow to cool

  • Heat one tablespoon full of oil in the frying pan, pout in beaten eggs and cook, drawing egg mixture in from sides of pan, until set on the bottom, creamy on top.

  • Spoon crab meat down centre of omelet and fold in half.

  • Serve hot on serving plate with Nuoc Cham sauce.
