Chicken Soup Recipe

(Canh Ga Bi Dao)

Ingredients : Serves 6

Chicken wings or half a chicken

Chinese winter melon

Spring onions (scallions)

Water

Salt

Nuoc cham sauce

Black pepper to taste

Method :
  • Cut chicken wings or half chicken into joints.

  • Peel melon, discard skin and spongy centre with seeds.

  • Cut melon into bite sized cubes.

  • Slice spring onions (scallions)

  • Put chicken into saucepan with spring onions, water and salt.

  • Bring to boil, then cover and simmer for 1 hour or until liquid is reduced and well flavored.

  • Add sauce and pepper to taste.

  • Serve immediately while it is still hot, with rice if desired.

Tip : Peeled, sliced and seeded cucumber can be used as a replacement for winter melon.
