Spinach with Peanut Sauce Recipe

Ingredients : Serves 4

Peanut Sauce

100 g

1 1/2 tablespoons

Water spinach or spinach

Garlic, crushed

Green onions (scallions), sliced

Peanuts , crushed

Vegetable oil





Smooth peanut butter

Coconut milk


Sweet chili sauce

Lime or lemon juice

Chicken broth

Method :
  • Trim stalks of water spinach (available from oriental grocery stores).

  • Blanch spinach by plunging it into boiling water, then refresh it in cool or iced water.

  • Drain completely.

  • Make peanut sauce in saucepan by combining all ingredients and stirring over low heat until smooth.

  • Fry green onions (scallions) and garlic until tender.

  • Add peanuts to heat followed by spinach and peanut sauce.

  • Garnish with coriander (cilantro) leaves.
