Caramelized Bananas Recipe

(Chuoi Caramen)

Ingredients : Serves 4

Sauce :

Hazelnuts, toasted and ground

Fresh bread crumbs

Vegetable oil, for deep frying




Soft brown sugar


Coconut milk

Method :
  • Peel the bananas and cut them in half lengthways, then cut each piece in half again,

  • Mix together the hazelnuts and breadcrumbs in a dish and coat the banana pieces well, pressing the crumbs on to them.

  • Heat together all the sauce ingredients in a small heavy based saucepan, stirring all the time until you have a caramel sauce.

  • Heat the oil in a deep-fryer or saucepan to 190oC (375oF) and fry the bananas in batches, for         2 minutes or until golden brown.

  • Remove the bananas on to kitchen paper to drain.

  • To serve, place the bananas on individual dishes and pour over the warm caramel sauce.
