Cassava Patties Recipe

Ingredients :
Makes 12 |
450 g
250 ml
125 g
2-3 drops
|
Grated fresh cassava
Water
Sugar
Green food coloring (optional)
Grated coconut

Method :

Mix the cassava, water and sugar in a
bowl.

Pour into a blender and blend until
mixture is smooth. Stir in food coloring if desired.

Pour the mixture into small molds or
muffin pans and place in a steamer above a saucepan of boiling water.

Cover with a tight fitting lid and steam
over medium heat for about 45 minutes, or until firm, making sure water
does not touch the patties.

Set aside to cool, then remove from molds.
Roll in grated coconut before serving.
