Sweet Sticky Rice Coconut Patties Recipe

Ingredients : Makes 30-35 parties

Uncooked glutinous rice

Water

Grated fresh coconut meat

Sugar

Method :
  • Soak glutinous rice in 1 liter of water for 8 hours or overnight. Drain the rice and reserve the water.

  • In a blender or food processor, grind the rice until it is smooth and has the consistency of dough.

  • Add just enough of the reserved water when grinding so the rice mixture turns.

  • Place the remaining 1 1/2 liters water in a pot and bring to the boil. When water boils, drop the patties in one at a time, making sure they don't stick together.

  • Patties are cooked once they float on the surface.

  • Remove with a slotted spoon and drain.

  • Do not stack them as they may stick together.

  • Mix grated coconut and sugar.

  • Roll the cooked patties in mixture and serve.
