Eggs
Scallion, chopped
Shallots, sliced and fried till crispy
Chopped garlic
Oil, for cooking
Soy sauce
Water
Pepper
Sesame oil
Heat oil in a pan. Grease the sides of the pan with this oil.
Break 1 egg into the centre of the pan. Cook till the egg white is set and a little brown on the sides. Flip over carefully to form a half moon.
Do not allow the egg yolk to set. Dish up carefully onto a serving plate.
Repeat with all the other eggs and add more oil when necessary.
Heat 1 1/2 tablespoons oil in pan and saut� garlic till fragrant.
Add soy sauce and water and bring to boil.
Stir in pepper and sesame oil. Pour sauce evenly over the plate of eggs.
Garnish with chopped scallion and crispy shallots and serve.
