Large eggs
Vegetable oil
Small shallot, finely chopped
Small red chili, finely sliced
Crab meat
Small shrimps (chopped)
Vietnamese fish sauce
Salt
Pepper
Coriander leaves, for garnishing
Beat the eggs in a bowl with a pinch of salt and pepper
Heat 1 tablespoon of the oil in a wok and fry the shallot and chili for 1 minute.
Add the crab meat and shrimps to the wok and continue to stir and fry for 1 more minute.
Splash in a little fish sauce and mix it in.
Move the crab and shrimp mixture to one side of the wok.
Heat the remaining oil in the wok.
Pour in the eggs, swirl them around and make the thinnest omelet.
When the bottom is set but the top is still creamy, add the crab mixture to one side of the omelet, folding the other side over it.
Serve immediately.
Garnished with coriander sprigs, with the dipping sauce.
