Marbled Tea Eggs Recipe

Tea eggs are often used in cold dishes or as an appetizer.

Ingredients : Serves 6

1 dozen

2 tablespoons

2 pieces

3-4 pieces

2 tablespoons

1 tablespoon

1/4 tablespoon


Black tea leaves

Cinnamon bark

Star anise

Soy sauce



Method :
  • Place eggs in a saucepan. Cover with cold water. Bring to boil slowly.

  • When water boils, reduce heat and simmer for 15 minutes. Drain and leave eggs to cool.

  • Using back of heavy spoon, crack eggs all over but do not remove shells.

  • Place cracked eggs in saucepan again. Add in tea leaves, cinnamon, star anise, dark soy sauce, salt and sugar.

  • Pour in enough water to cover the eggs.

  • Boil for 2 1/2 hours or longer,

  • Drain and allow to cool at room temperature.

  • Peel and cut into wedges.
