Fish sauce

Caramel syrup
Ground black pepper
Red chili, finely chopped
Spring onion, white portion only, finely chopped

Method :

Marinade pork with fish sauce, sugar,
caramel syrup, pepper, chili, spring onion and salt for 1 hour.

Heat oil in a claypot and saut� pork for 5
minutes.

Add water or stock and bring to the boil.

Lower heat and simmer until liquid
evaporates and meat is cooked.

Sprinkle some pepper over and serve with
steamed rice.
