Method :

Put the lemon grass, shallots, chilies,
garlic, salt, pepper and oil in a mortar and pound together, or process
in a small food processor.

Mix well with the beef, cover and marinate
at room temperature for at least 3 hours.

Thread the beef cubes on to pre-soaked
bamboo skewers.

Cook under a preheated hot grill for about
3 minutes on each side, turning occasionally.

Serve with the salad, nuoc cham dipping sauce and
pieces of French bread.
