Grilled Pigs' Trotters Recipe
(Chan Mong Lon Nuong)
Fermented black beans, soaked in cold water
for 6 minutes and drained
Root ginger, peeled and chopped
Red chili peppers, chopped
Nuoc Mam sauce
Pigs' trotters, washed,
blanched and chopped into 4-5cm
Put all the ingredients except the
trotters into a blender or food processor and blend until smooth. Empty
into a large bowl and add the trotters. Mix until the trotters are
thoroughly coated and leave in the refrigerator for at least 2 hours,
overnight if possible.
Put the trotters in a dish that will fit
the steamer and stream for 1 1/2 hours or until the trotters are tender.
Drain the meat and reserve the cooking
juice. Grill the trotters until they are just crisp on the outside,
brushing the reserved cooking juice.
