Trim off the black surface of the ham.

Soak the ham with hot water for about 1/2
hour, then wash it. Put the ham on a plate. Steam for about 1/2 hour.

Cut the ham crosswise into 1 inch wide, 2
inches long, thin slices. Arrange the ham slices attractively on the
bottom of a bowl or deep plate. Put the odd sized pieces in the center.

Add half of crystal sugar, wine and hot
water (to cover the ham). Steam for about 30 minutes.

Drain off the liquid from the steamed ham
bowl. Add soaked lotus seeds (or chestnuts) and other half of crystal
sugar. Steam for another 1/2 hour until the lotus seeds are tender.

To prepare sauce, pour the liquid from the
steamed ham bowl into a small saucepan. Add kuei-hua juice and simmer
until sauce thickened.

Turn ham from bowl to plate and pour sauce
over it and serve.
