Stir-Fried Pork Slices and Celery Recipe

(Thit Lon Xao Voi Can Tay)

Vegetable oil

Lean pork, sliced thinly and cut in 1 1/2 inch pieces

Soy sauce


Button mushrooms

Spring cabbage,

cut in 5 cm with tougher stalks discarded

Celery sticks, sliced thinly

Nuoc Mam sauce (optional)

Chicken stock



Method :
  • Heat 15 ml oil in the wok, add the pork and stir fry over highest heat for 2 1/2 minutes or longer if the pork needs more cooking.

  • Add the soy sauce and sugar and stir with the pork for a further 2 minutes.

  • Scoop into a bowl and keep in a warm oven.

  • Wipe the wok and pour in the remaining oil.

  • Add the mushrooms, cabbage and celery and stir fry for 1 1/2 minutes.

  • Add the Nuoc Mama sauce, if using , and stock and stir fry for another minute.

  • Cover and leave to cook for a further 2 minutes.

  • Then add the cooked sliced pork with the cornflour and salt to taste.

  • Stir and mix thoroughly for a minute or so and serve immediately with rice or noodles.
