Vietnamese Sweet Pork Recipe

(Thit Lon Nau Caramen Kieu Vietnam)

Ingredients : Serves 4

Palm or golden granulated sugar


Lean leg of pork, cubed

Mooli radish, about 30 cm (12 inches) long, peeled and thinly sliced


Shallot, chopped

Vietnamese fish sauce

Method :
  • Gently heat the sugar with the water in a heavy based casserole until the sugar is dissolved and the mixture is beginning to thicken and caramelize a little.

  • Add the pork, sliced radish, pepper and shallot.

  • Top up the casserole with water, level with the ingredients.

  • Add the fish sauce, stir and bring to the boil.

  • Reduce the heat to a simmer, cover and continue to simmer for 1 - 1 1/2 hours, until pork is tender and cooked through.
