Barbecued Chicken Skewers Recipe

Ingredients :
Serves 6-8 |

Marinade :
60 ml
3-4 cloves

Bamboo skewers
Chicken chunks
Tomato or banana ketchup
Vinegar
Garlic, crushed
Small onion, diced
Small chili, chopped
Salt
Pepper

Method :

Soak the bamboo skewers in water for 30
minutes then set aside.

To prepare the Marinade, combine the
vinegar, garlic, onion, chili, salt and pepper and mix thoroughly.

Marinade chicken for 2-3 hours

Drain the chicken and reserve Marinade.
Combine the Marinade with tomato and banana ketchup.

Place in a wok and bring to the boil.
Remove from heat and set aside.

Thread 3-4 chicken chunks onto each
skewer. Heat a griller to medium. Grill the skewered chicken for about
3-5 minutes on each side, or until lightly browned.

When lightly browned, brush the chicken
chunks with the reserved Marinade.

Continue grilling until chicken is fully
cooked, about 3-5 more minutes.
