Caramelized Chicken Wings with Orange Sauce Recipe

Chicken wings

Sesame oil

Clear honey

Vegetable oil

Caster sugar

Orange, shredded, rind and juiced

Salt and pepper

Method :
  • Season the chicken wings with salt and pepper. Mix the sesame oil and honey and spread this over the wings.

  • Heat the oil in a heavy based pan and cook the chicken wings for about 4 minutes on each side or until just done.

  • Remove the pan and keep warm. Reserve the pan juices.

  • Add the sugar to the pan and heat without stirring until it caramelizes. Remove from the heat.

  • Add the orange juice and reserved pan juices. Stir over a low heat until a smooth sauce forms, adding a little water or orange juice if it becomes too thick.

  • Add half the orange rind and continue to cook over a very low heat.

  • Place the chicken wings on to a warmed dish.

  • Pour the caramel sauce over them and garnish with the leftover strips of orange.
