Chicken in Chili Sauce Recipe

Ingredients : Serves 4 - 6

Chicken (medium size)



Fresh ginger




Chili sauce

Garlic, finely chopped

Fresh root ginger, chopped

Peanut butter

Spring onion (scallion), chopped

Sesame oil

Vegetable oil

Chicken stock


Method :
  • Boil 1.5 pt. water in a pan.

  • Add the chicken meat and simmer for about 10 minutes.

  • Peel and slice the onion.

  • Pour away a quarter of the water. Add salt, ginger and onion.

  • Cook for another 40 minutes.

  • Cut the cucumber into shreds, leaving the skin on.

  • Remove the chicken to cool.

  • Shred the meat into pieces of similar size to the cucumber shreds.

  • Place all the sauce ingredients in a bowl and mix well.

  • Arrange the cucumber on a serving plate and pile the chicken on top.

  • Pour over the sauce.

  • Serve hot with white rice and soup, if desired.
