Chicken in Shrimp Paste Recipe

As in all fried chicken dishes, the chicken in shrimp paste should be juicy inside and crispy outside. Careful heat control is the key....!

Ingredients : Serves 6 - 8

2 kg

5 tablespoons

1 sprig

 

Marinade

4 tablespoons

1 tablespoon

2 teaspoons

1 teaspoon

1/2 teaspoon

Shrimp paste (fresh shrimps, finely minced)

Chicken fillet

Peanut Oil  (for frying, add more if necessary)

Coriander (cilantro) leaves, for garnishing

 

  

Corn flour

Rice wine or dry sherry

Fresh ginger juice

Sugar

Sesame oil

Method :
  • Chop chicken into large, bite-sized pieces and pat them dry.

  • Mix the shrimp paste with the marinade ingredients.

  • Marinade chicken for 30 minutes.

  • Heat the peanut oil in the frying pan until it is very hot.

  • Put in the chicken chunks and deep fry them for 2 minutes over a lot heat.

  • Remove the chicken and set the pieces aside while re-heating the oil to boiling point.

  • Fry them again for 1 minute.

  • Scoop out and serve on serving plate.

  • Garnish with coriander (cilantro) leaves.
