Cold Dish Steam Chicken Recipe

This cold dish steam chicken would make
an ideal starter or part of a buffet meal. Ingredients :

Chicken
Ginger root
Spring onions (scallions)
Salt
Soy sauce
Sugar
Garlic, crushed
Ginger root, peeled
Spring onion (scallion)
Sesame oil

Method :

Clean the chicken. Place it in a large
pot.

Add the ginger root and onions. Cover the
pot with a tight fitting lid (preferable pressure cooker).

Bring it to boil. Simmer for 5 minutes,
then turn off the heat and let the chicken cook gently in hot water for
3 - 4 hours.

Do not lift the lid while awaiting the
water to cool.

To serve, remove the chicken and drain.

Chop into 20 - 24 pieces and place on the
serving platter.

Finely chop the garlic, ginger root and
onion.

Mix with salt, sugar, soy sauce, sesame
oil and a little chicken stock. Either pour the mixture all over the
chicken or use as a dipping sauce.
