Grilled Chicken Breast with Kaffir Lime

Chicken, deboned
Garlic juice
Spring onion (scallion), white portion only, finely chopped
Salt
Ground white pepper
Chicken seasoning powder
Sugar
Rice wine
Annatto seed oil
Kaffir lime leaves
Toothpicks
Limes, halved

Method :

Cut chicken breast into 20 large cubes.

Marinade with garlic juice, spring onion,
salt, pepper, chicken seasoning powder, sugar, rice wine and annatto
seed oil for 20 minutes.

Wrap each chicken breast cube in a kaffir
lime leaf and use a toothpick to secure.

Place in an oven and cook at 250oC
for 15 minutes or until chicken turns golden brown. Arrange on a plate.

Prepare dip. Squeeze juice from limes then
mix with salt and pepper.

Serve with grilled chicken.
