Grilled Chicken with Lemon Grass Recipe
(Ga Xao Lan)

Ingredients :

Large boneless, skinless chicken breasts
Lemon grass stalks, very finely chopped
Garlic, finely chopped
Palm or golden granulated sugar
Light soy sauce
Vietnamese fish sauce
Lemon, juiced
Groundnut oil

Method :

Butterfly the chicken breasts. Sit each
one horizontally, so that is still joined in one side then open it out.

Cover it with cling film and bash it flat
with a meat mallet or a rolling pin.

Combine the lemon grass, garlic, sugar,
soy and fish sauces, lemon juice and groundnut oil in a bow.

Mix thoroughly, then coat the chicken.

Cover and leave to marinate for at least 1
hour.

Place the chicken breasts on a grill rack
and cook under a preheated grill for about 3 minutes on each side, or
until cooked through.

Slice and serve.
