Chickens and ducks in Vietnam are usually
tougher, hardier and tastier birds than those we are used to. They range
around all day long, eating whatever they can find. Poultry, like other
types of meat, is quite expensive for the average Vietnamese purse, and
the quantities eaten are small in comparison to what we have come to
expect in the West. In the upland regions of central and northern Vietnam,
there is still plenty of game to be found and, if you are lucky, you will
be able to sit down to a meal of pheasant, quail or partridge. |
