Steamed Chicken with Green Onion Recipe

Ginger
Salt
Wine
Green onion, shredded
Young ginger, shredded

Method :

Crush green onion and ginger with blade of
knife, put in bowl with wine and salt. Mix well.

Clean and rub the chicken with #1
ingredients (outside and inside). Soak for 1/2 hour but not over
2 hours.

Place the bowl of chicken and marinate in
boiling steamer to steam over high heat for 10 to 15 minutes.

Turn off heat and remove the chicken after
15 minutes. Cut the chicken into 1 inch wide, 2 inches long pieces, lay
on platter in the chicken shape.

Sprinkle the shredded green onion and
ginger on top.

Heat oil in frying pan. With a large
cooking spoon, scoop up all the heated oil and splash over chicken dish.

Drain the oil back into pan and reheat.
Repeat process a second time but do not drain from dish.

Serve hot.
