Fried Egg Noodles in Sauce Recipe

Seasoning :-

Thin dry egg noodles

Soy sauce

Sesame oil

Shrimps (shelled, deveined and rubbed with a little salt and cornstarch)

Chicken meat, sliced

Chicken gizzards, sliced

Pork liver, thinly sliced

Chives, cut into 2 inches length

Dried mushrooms, soaked and thinly sliced

Cornstarch, blended with 3 tablespoons water

Cooking oil



Chicken stock

Soy sauce

MSG (optional)


Sesame oil


Method :
  • Lightly scald egg noodles in boiling water. Remove, drain and mix well with 2 tablespoons of soy sauce and 1 tablespoon of sesame oil.

  • Heat oil in pan. Spread the noodles in it and fry till one side is lightly browned. Turn over and brown the other side. Transfer to a large serving plate.

  • Heat 3 tablespoons more oil and fry chicken and shrimps till color changes.

  • Add gizzards, mushrooms and chives. Season with soy sauce and stir fry for a little while.

  • Pour in stock and bring to boil.

  • Add pork liver, MSG and salt to taste. Cook till liver is just done.

  • Thicken sauce with cornstarch mixture. Stir in sesame oil and pepper.

  • Pour sauce over the fried noodles and serve hot.
