Glutinous Rice Recipe

Often known as sticky rice, this can be used in place of ordinary rice or sweetened for a dessert. In Vietnam, it is normally eaten for breakfast or in the evening but not at lunchtime. It is often steamed in bamboo rice steamers, which can be obtained in various sizes from individual to family size.

Ingredients : Serves 4

500 g

Glutinous rice

Method :
  • Soak the rice in a large bowl of water for 8 hours. Drain the rice and rinse it under running water.

  • Line a steamer with muslin and spread the rice over it.

  • Steam, covered, for 30 - 40 minutes.

  • Taste the rice after 30 minutes to check the consistency.

  • It should be softish at this stage.

  • You can always sprinkle a little water over it to help it along.
