Dressing
185 g
1 teaspoon
250 ml
Small carrot, peeled and cut into matchsticks
to yield 1 cup
Diakon raddish, cut into matchsticks to yield 1 cup
Caster sugar
Salt
Rice vinegar
Make the dressing by combining all the ingredients in a bowl and mixing until the sugar is dissolved.
Combine the vegetables in a bowl.
Add the dressing and toss to mix well.
Allow to marinate for at least 30 minutes, tossing once or twice.
Drain the pickles and transfer to a serving bowl.
Serve with a fish, meat or poultry dish and steamed rice.
