Crisp Cucumber Pickles Recipe

Ingredients : Serves 6

1 small



185 g


250 ml

Cucumber, peeled and cut into matchsticks

to yield 1 cup


Caster sugar


Rice vinegar

Method :
  • Make the Dressing by combining all the ingredients in a bowl and mixing until the sugar is dissolved,

  • Combine the cucumber in a bowl. Add the Dressing and toss to mix well.

  • Allow to marinate for at least 30 minutes, tossing once or twice.

  • Drain the pickles and transfer to a serving bowl. Serve with a fish, meat or poultry dish and steamed rice.
