Green Mango Salad Recipe

Although the sweet orange, yellow mangoes and papayas are devoured in vast quantities when ripe and juicy, they are also popular when unripe and green. Piled high in baskets in the markets, they are sold as a vegetable rather than a fruit because the tart and crunchy texture is sought after for salads and stews. This simple salad has a refreshingly tangy, sweet flavor and a lovely texture, and is delicious served with steamed or stir-fried shrimps, and with grilled or seared beef. Green mangoes have dark green skins and light green flesh and can be found in Chinese and Asian markets.

Green mangoes

Limes, rind and juiced

Sugar

Nuoc cham

Green Thai chilies, seeded and finely sliced

Fresh coriander (cilantro), stalks removed, finely chopped

Salt

Method :
  • Peel, halve and stone (pit) the mangoes, and slice them into thin strips.

  • In a bowl, mix together the lime juice and rind, sugar and nuoc cham.

  • Add the mango strips with the chilies and coriander.

  • Add salt to taste and leave to stand for 20 minutes to allow the flavors to mingle before serving.
